BLT Pizza

Continuing my homage to the unusual pizzas of the past at California Pizza Kitchen, and I am recreating my favorite discontinued pizzas at home.
I started by prepping a whole wheat dough. It was frozen, so I let it defrost and proof on my counter for several hours before touching it. Then I cleaned the surface I would be working on, made sure it was dry, and poured down some cornmeal. When stretching the dough out, you'll want to use that or semolina, which is more expensive. Coat both sides and ensure that your ball is pretty round. Then stretch it out a bit, flipping it a few times to coat and sticky parts with corneal. Stretch the dough with your fingers and slide the dough in a clockwise, circular motion, keeping your palm off the middle. Keep stretching until you have a fairly good size dough. Then gently pick up the dough and shake off excess cornmeal. Lay down in a pizza pan or on a pizza stone. Preheat your oven to 500 degrees.
 
Start with spreading about 2 cups of mozzarella cheese onto the crust, paying more attention to the edges, because everything will pool to the center.
Then I added 3 broken up strips of lightly cooked bacon. This pizza is great warm or cold but you should make the decision now how you plan to eat it. If you want to eat it cold, dice up some cherry tomatoes and spread those on as well and then top with a sprinkling of Italian seasoning over the pizza and bake. If you want to eat it warm, right away, I would bake it first and then add the tomatoes. Pizza should bake for 8 minutes. When it comes out of the oven, top evenly with some shredded lettuce. Then, using a pastry bag with a small tip or a Ziploc bag with a small slit cut into it, pipe out some ribbons of mayo on top.
Cut into six or eight slices, twisting your wrist at the end of each pizza slice with the cutter to ensure that the slices separate.

Summer Berry Salad

Anyone that knows me can tell you, I LOVE strawberries! When salads like these started becoming popular and readily available in restaurants, I couldn't have been happier! There is really no set recipe to this one. It's a salad! Throw in what you like, leave out what you don't.
 
Start with a spring mix lettuce.
Toss in some romaine or spinach.
Sprinkle in a few veggies like celery and red onion.
Mix in your fruits like strawberries, blueberries, raspberries, blackberries, grapes, raisins, or dates.
Layer with some nuts like pecans, walnuts, almonds, or peanuts.
Top off with some goat cheese, bleu cheese, or Gorgonzola!
Personally, I think the best dressing on salads like these is poppyseed! It adds just enough tartness, flavor, and punch for a mix of fruit and veggies.
Other options are ginger sesame or a raspberry vinaigrette.
I loved Wishbone's Bountiful Berry Delight but alas, it got discontinued!

I didn't have anything suitable on hand so I made some dressing in a pinch.
 
Raspberry Vinaigrette Dressing:
3 oz olive oil
3 oz red wine vinegar
2 Tsp sugar
Pinch of salt and pepper
1 Tsp Dijon mustard
2 Tbsp raspberry preserves
Shake Well!

Classic Wedge Salad

I'm sure you don't really need a blog to tell you how to make a salad but, I want to try to post some wonderful salads to entice the health conscious in everyone. I love salads in restaurants! What is it about a salad that someone else makes that makes it taste so much better? I wish I could answer that question but, this is a great restaurant inspired salad that is easy to make at home.
1 head of iceberg lettuce, cored and halved
3 cherry or plum tomatoes
1/2 cucumber, sliced and cut
1/4 cup minced red onion
2 tsp bacon bits
1 stalk celery, minced
2 Tbsp bleu cheese crumbles
 
Simply prepare the lettuce, cut it in half and removing the core, and cover with the remaining ingredients. This salad is great with your favorite bleu cheese dressing and has a great presentation.
 
I always stick with Ken's Steakhouse dressings. Most restaurants use it and I've never gotten a bad flavor from them. I have bought many dressings (bleu cheese in particular) that had bad aftertastes. Sticking with this brand has never let me down.
