Tzatziki

Tzatziki is a traditional Greek yogurt dip. It's used as a sauce to many side dishes like Zucchini Keftedes with Feta & Dill or great just with some pita bread.

1 individual container of plain Greek yogurt
1/2 cucumber, peeled
1 Tsp onion powder
1/2 Tsp Greek seasoning

Grate the cucumber with a zester. It will grate into mostly a liquid. Discard any large chunks or seeds.
 
Open the container of Greek yogurt and mix the yogurt into the cucumber mixture. Then set up a strainer lined with a coffee filter (a flat bottom works best). Pour the mixture into it, being careful that it doesn't spill over. Put the strainer over a bowl and store, uncovered in the fridge for at least an hour.
When the yogurt seems thick again and a decent amount of liquid has strained, discard the liquid and place the yogurt back in a mixing bowl. Add in the onion powder and seasoning. You might want to add some salt to taste but, this dip is usually served fairly bland so that it doesn't mix with the flavors if the main dish.
